Pork Skin Soup
To prepare a delicious rib soup with pork rind, we start by preparing the necessary ingredients. The first step is to boil the ribs in a large pot with cold water, also adding a pinch of salt to enhance the flavor. Meanwhile, the pork rind is carefully cleaned of excess fat, ensuring it is clean and ready to be boiled. After cleaning it, we cut the pork rind into thin strips, which will add a crunchy texture to the soup, and we put it to boil in another pot.
During the boiling of the ribs, it is essential to remove the foam that forms on the surface using a spoon. This will help keep the soup clear and appetizing. After about 30 minutes, when the ribs have started to release their flavors, we cut the onion into quarters and add it to the pot with the ribs. This will contribute to a rich and savory taste.
Once the ribs are well boiled, we take them out of the pot and carefully separate the meat from the bone, adding the meat back into the soup. Next, we cut the carrot and celery into small cubes, which we add along with the ribs. When the pork rind is cooked, we strain it and combine it with the vegetables in the pot to create a harmonious mixture.
Now, it is time to season the soup. We add salt and seasoning to taste, gently stirring to evenly distribute the spices. The soup should boil for another 15 minutes, for the vegetables to soften and the flavors to blend perfectly. After the time is up, we remove the onion from the pot, as it has fulfilled its role in flavoring the soup.
To add a creamy note, we prepare a mixture of an egg yolk, a few crushed garlic cloves, and sour cream. It is important to pour the mixture into the pot slowly, stirring carefully to avoid curdling the egg. After this step, the soup can be salted to taste. We let it boil for another 10 minutes to blend the flavors, and then it is ready to serve.
The rib soup with pork rind is served hot, sprinkled with fresh parsley on top for an extra touch of freshness. If you do not have fresh parsley on hand, the dried version is just as good and will give a distinct flavor. This recipe is not only comforting but also full of tradition, being ideal for cool days or for a family meal. Enjoy every spoonful of this delicious soup!
