Cauliflower Cream
To prepare a delicious cauliflower paste, start by washing the cauliflower under a stream of cold water, making sure to remove any impurities. After cleaning, break it into small florets, so it cooks evenly and integrates better into the recipe. Place the cauliflower florets in a bowl of cold water and add a teaspoon of salt, which will help retain the color and texture. Bringing the water to a boil takes a few minutes, so you can use this time to prepare the other ingredients.
Once the water starts to boil, carefully add the cauliflower and let it boil for about 5-7 minutes, until it becomes tender but not overcooked, so it retains some texture. Once ready, drain the cauliflower well in a colander and let it cool completely, so that no excess steam forms in the bowl where you will blend it.
In a tall bowl, add the boiled cauliflower florets, a handful of fresh dill, extra virgin olive oil for a rich taste, salt and pepper to taste, and a few peeled garlic cloves. The garlic will add an intense and pleasant flavor, balancing the sweetness of the cauliflower. Finally, add sour cream, which will give creaminess to your paste.
Use an immersion blender or a regular blender to mix all the ingredients until you obtain a smooth and fine paste. Check the taste and adjust the salt or pepper if necessary. If you desire a finer texture, you can add a little more sour cream or olive oil.
This cauliflower paste is perfect as an appetizer, being delicious served alongside crispy toasted bread or even Wasa bread, which adds a crunchy and healthy note. You can also use it as a filling for sandwiches or even in salads.
If you plan to take it on the go for a quick snack, make sure to seal it well in an airtight container to keep it fresh. This recipe is not only tasty but also versatile, being enjoyable at any time of the day. Enjoy your meal!
