If you prefer a more colorful appearance, you can add sweet paprika to the oil in which you fry the onion, but I prefer to keep the buns brighter, letting the onion shine through its shades.

While the onion is frying, prepare the buns. Cut thin caps from the top of each bun and gently remove the crumb. If the buns are fresh, the crumb will come out easily, leaving a perfect hollow for the filling. Fill each bun with the bean paste, being careful to fill them well but not to the edge. With a spoon, create one or two indentations in the beans to create a space where you will add the sautéed onion. On top, place a teaspoon of the fried onion, making sure to add a little oil from the pan to enrich the flavor.
