Pleurotus Mushrooms in White Wine

 Ingredients: - 500 g oyster mushrooms - 3 green onions - 2 medium-sized garlic cloves - 1 tablespoon of olive oil - 20 g herb and garlic butter (low fat) - 150 ml 15% cooking cream (creme cuisine) - 100 ml dry white wine - 3 sprigs of parsley - finely ground sea salt - a mix of white, green, black pepper, and paprika

To prepare a delicious mushroom recipe, we will start by ensuring we have all the necessary ingredients at hand. First, the mushrooms, preferably champignon or a mix of wild mushrooms, are washed well under a stream of cold water and cut into large pieces to maintain their crispy texture during cooking. Next, we turn our attention to the green onions, which will add a fresh flavor to the dish. They are carefully peeled, washed under running water, and sliced into thin rings, making sure to use both the white and green parts for a colorful appearance and intense aroma.

Garlic is an essential ingredient, so we handle it using the same procedure: peeling, washing, and finely chopping to release its unmistakable flavors. Now, we are ready to start cooking. In a large skillet, oil is added, and when it becomes hot, a generous piece of butter is added, which will give a special flavor to the mixture.

Once the butter has completely melted, the chopped mushrooms are added. They are sautéed lightly for about 5 minutes, stirring continuously with a wooden spoon to prevent sticking to the skillet. The mushrooms will begin to release their juices, intensifying the flavor of the dish. After this interval, the previously prepared green onions and garlic are added. It is left on moderate heat for another 5 minutes, stirring constantly, so that all the ingredients combine harmoniously.

The next step is adding 125 ml of cooking cream, which will provide a creamy appearance and rich taste, followed by white wine, which will add a pleasant acidity. We stir gently to combine all the flavors, then season with salt and a mix of white, green, and black pepper, plus a teaspoon of paprika if we want to add a splash of color and a bit of heat to the dish.

We let the mixture simmer on low heat for 3 minutes, allowing the flavors to meld, and then complete it with the remaining cream. Fresh parsley is washed, finely chopped, and added to the delicious mixture, letting everything simmer on low heat for a minute. This addition will provide not only a fresh aroma but also a vibrant appearance.

To serve, we prepare whole grain toast that will perfectly accompany the cooked mushrooms. This dish can be enjoyed as an appetizer or as a main course, offering a flavorful gastronomic experience, ideal for any occasion!
