Green Bean Soup with Flour Dumplings

 Ingredients: 1 large onion, 3 bell peppers, 1 white root (parsley/parsnip), chicken bones (150 g small pieces of pork - olive size), 1 can of green beans (I had in the freezer), 1 egg, flour, 3-4 tablespoons of oil, salt, pepper, paprika (or red for color), sour cream (optional), fresh parsley.

To prepare a delicious chicken soup with dumplings, we start by gathering all the necessary ingredients. In a larger pot, we add the oil and heat it over medium heat. When the oil becomes warm, we add the peeled and finely chopped onion, along with the bell pepper, which has also been washed and diced. We let these vegetables sweat for 3-5 minutes, stirring occasionally to prevent burning. This process will allow the flavors to develop and meld together.

Once the onion becomes slightly translucent, we add the chicken bones. If we want a heartier soup, now is the time to add small pieces of chicken meat. We stir the ingredients on the heat for 5 minutes, ensuring everything combines well. Then, we add the washed and thinly sliced vegetables, along with canned or frozen beans, which will add a pleasant texture and a source of fiber. We add paprika and mix everything very well so that the flavors distribute evenly.

After mixing, we pour enough water into the pot to cover all the ingredients. We season with salt and pepper to taste. We let the soup boil, and in the meantime, we can prepare the dumplings. In a small bowl or a tea cup, we crack an egg, salt it, and beat it with a fork until it becomes homogeneous. We add 3-4 tablespoons of water and mix again. Then, we gradually incorporate 2-3 tablespoons of flour, mixing well to avoid lumps. We continue to alternate adding water and flour until we obtain a soft mixture that almost flows.

When the soup has started to boil, we use a fork or a teaspoon to take small pieces of the prepared dough. These are carefully introduced into the soup, forming the dumplings that will add flavor and consistency to the dish. We let the soup boil for about 15 minutes, ensuring that the dumplings are fully cooked. In the end, we turn off the heat and add freshly chopped parsley, which will bring an extra touch of freshness and color.

Our soup is now ready to be served. It can be enjoyed plain or with a spoonful of sour cream, depending on preference.
