Leek Soup

 Ingredients: For the leek soup we need (for a 5 l pot): -2 medium-sized leeks -2 carrots -2 parsley roots -2-3 red onions (optional, I like colorful vegetables) -1 medium-sized celery root -2 suitable peppers (green-red) -2 tablespoons and 1/2 of rice -a medium-sized zucchini -tomato juice (canned tomatoes) to taste

A delicious and nutritious recipe that can turn an ordinary day into a special one is vegetable soup with rice. This recipe is simple and full of flavors, perfect for a family meal or to be enjoyed alone on a cool evening. We start by preparing the ingredients.

First, we take the carrots, parsley root, celery root, bell peppers, and onion. We carefully peel them and cut them into small cubes so that they cook evenly and integrate perfectly into the soup. These vegetables will form the flavorful base of our dish. In a large pot, we add 2-3 tablespoons of olive oil or sunflower oil and sauté the vegetables. At first, we leave them on medium heat, stirring occasionally, and add a little vegetable seasoning to enhance the flavors.

After the vegetables have softened, we add two cups of water and let it come to a boil. This step is essential to allow the vegetables to release their natural juices, creating a rich base for our soup. Once the water has started to boil, we add the sliced leeks and diced zucchini. These vegetables will add a delicate texture and a slightly sweet taste. We continue to cook until they also become tender.

When all the vegetables are well cooked, it's time to add the rice. It will absorb all the flavors and make the soup heartier. Depending on personal preferences, we can also add tomato juice or diced tomatoes, which will provide an extra acidity and vibrant color. After the rice is fully cooked, it’s time to sour the soup. We add borscht, which can be made from bran or any other preferred type, to give a slightly sour taste.

Finally, we sprinkle finely chopped lovage, which will add an unmistakable aroma. The soup can be served as is or alongside a bean stew, a perfect accompaniment that will make the meal more filling. This recipe is not only easy to prepare but also extremely healthy, full of vitamins and nutrients. Enjoy your meal!
