Beef Soup with Sour Cream
Ingredients: 1 kg beef 3 l water 500 g sour cream 3 carrots 1 small celery root 2 medium onions 1 magic bors (packet) salt to taste (or vegeta)
Beef is a versatile and delicious ingredient, and preparing a beef soup can be a true culinary art. Start by soaking the beef in cold water from evening until morning. This process not only helps to soften the meat but also removes impurities, providing a cleaner and more refined taste. In the morning, take the meat out of the water and cut it into small cubes, about 1-2 cm in diameter. This size will allow the meat to boil evenly and become tender.
Put the cut meat into a large pot with cold water and gradually bring it to a boil. As the meat begins to boil, you can prepare the vegetables. Choose fresh vegetables like carrots, celery, and bell peppers, and cut them into small cubes. These not only add flavor but also color to the soup, transforming it into an appetizing dish. Add the vegetables over the meat and let them boil together. If you notice that the meat is boiling slowly, feel free to add water gradually to maintain an optimal level of liquid in the pot.
After the meat and vegetables have boiled for about 30-40 minutes, add salt or seasoning to taste. These spices will enhance the flavors and give the soup a richer taste. Then, prepare the borscht. It is ideal to use natural borscht, but if you don’t have it, you can opt for store-bought borscht. Dissolve the borscht in the soup and let it boil for another 5 minutes for the flavors to combine perfectly.
To achieve a creamy consistency, take a cup of sour cream and mix it with a tablespoon of flour. This combination will prevent the sour cream from curdling in the soup. Add the sour cream mixture to the pot and stir well, allowing the soup to boil for a few more minutes. This will enrich the dish and give it a wonderful taste. When the soup is ready, turn off the heat and let it rest for a few minutes before serving. You can add freshly chopped parsley on top for an extra flavor boost and a more pleasant appearance.
