Ingredients: -450 g flour (whole grain is healthier) -1 teaspoon fenugreek seeds -1 level tablespoon of salt -water
Sift the flour with salt on the work surface or in a large bowl to ensure the ingredients are well incorporated. Make a deep well in the center, like a small crater, and add the fenugreek seeds, which have been previously ground using an electric grinder. These seeds will provide a distinctive flavor to the dough, bringing a slightly spicy aroma and a hint of nuttiness. Add a few tablespoons of warm water into the well and start kneading the dough, gradually incorporating the flour from the edges. It is important to add the water gradually to avoid making the dough too wet. Continue kneading until the dough becomes smooth, elastic, and easy to shape. Once you achieve the desired consistency, form a uniform ball, dust it with a little flour to prevent sticking, and cover it with a dry towel. Let the dough rest for 30 minutes, during which the gluten will relax, making it easier to shape.
After the dough has rested, divide it into 10-12 equal pieces. Shape each piece into thin discs, making sure to achieve an even thickness. An effective method is to roll out a large sheet of dough and then cut rounds using a cutter or a glass. Place the discs on a dry towel, sprinkle them with a little flour to prevent sticking, and fold them in half. Cover them with another dry towel and let them rest for another 30 minutes to firm up a bit and become easier to handle.
Meanwhile, prepare the trays by lining them with baking paper and preheat the oven to 220 degrees Celsius. After the resting time has expired, unfold the discs of dough, shake off any excess flour, and carefully place them in the prepared tray. Bake them in the preheated oven for 8-10 minutes, until they become golden and nicely colored, but be careful not to burn them. Halfway through the baking time, flip them quickly to ensure even cooking on both sides.
These delicious discs of dough can be served alongside a hot soup to complete the meal, or you can snack on them as they are, enjoying their crunchy texture and unmistakable flavor.
