Vegan Chocolate Cake

For those who are fasting or adopting a vegan lifestyle, I propose a delicious and easy-to-make recipe, perfect for December, but not only: Vegan Chocolate Cake. This recipe is not only a delight for the taste buds but also a healthy option without animal-derived ingredients.

We start by sifting the flour, cocoa powder, and baking powder into a large bowl. These dry ingredients need to be well mixed with a whisk to achieve a homogeneous mixture. In a blender, we add the sugar, plant-based milk (almond, soy, or coconut, depending on preferences), and melted coconut oil. We blend well until all ingredients are completely integrated and homogeneous. Then, we pour this liquid mixture over the dry ingredients and use a mixer to perfectly combine them.

While we are working on the dough, we preheat the oven to 160 degrees Celsius. We prepare a cake pan with a diameter of 20 cm, lining it with parchment paper and greasing it with a little coconut oil to prevent sticking. We pour the cake mixture into the pan and place it in the oven, baking for about 80 minutes. It is important to test with a toothpick or check the internal temperature of the cake; it is ready when it reaches 90 degrees Celsius.

After the cake is baked, we let it cool in the pan, then carefully remove it and cut it into two thinner layers, which we will soak to add moisture and flavor. While the layers cool, we prepare the chocolate mousse. We melt the vegan chocolate together with 100 g of plant-based cream over a double boiler, stirring constantly to prevent burning. In another saucepan, we heat the plant-based milk with sugar, and after the sugar has completely dissolved, we add the agar-agar, boiling the mixture for a few minutes until it reaches a first boil.

Once both mixtures are ready, we add the remaining plant-based cream over the melted chocolate and the milk-sugar mixture, homogenizing everything with the help of a mixer. Finally, we add organic vanilla essence to enhance the flavor. It is recommended to keep the cream in the refrigerator until the layers have cooled.

Once the layer is completely cooled, we spread the first layer with chocolate mousse, add the second layer on top, and cover the entire cake with mousse. For decoration, we sprinkle coconut on top, giving it a festive and attractive appearance.
