Bean Soup with Country Ribs

Ingredients: *500 grams of country-style ribs *2 handfuls of beans (from the market) *2 medium carrots *1 tablespoon of olive oil *1 onion *1 celery *1 red bell pepper and 1 green *2 tablespoons of Sanovita dried vegetable mix *salt and pepper *1 red onion (for serving) *dill *tarragon

We start the preparations the night before, when we soak the beans in a bowl of cold water. It is essential to carefully select the beans, removing any impurities or spoiled beans, and then wash them well under a stream of cold water. This step will facilitate cooking and help achieve a finer texture. The next day, we drain the water and put the beans in a large pot with clean water, adding a teaspoon of salt. We let the beans boil over medium heat for about 40 minutes, then change the water and continue boiling in fresh water. This process helps remove compounds that could cause digestive discomfort.

While the beans are boiling, we take care of preparing the vegetables. We finely chop the carrot, celery, onion, and bell peppers, ensuring that all ingredients are of uniform size for even cooking. After the beans have started to become tender, we check the consistency of the beans and, using a wooden spoon, gather the skins that have formed on the surface. This step is important for obtaining a clear and appetizing soup.

Next, we add the country-style ribs, cutting them into suitable pieces. We incorporate them into the pot with the beans and vegetables, being careful to remove the foam that forms on the surface. This is a normal part of the meat cooking process, and by removing it, we will achieve a clearer soup. After adding the ribs, we add the chopped vegetables, a tablespoon of olive oil, and let everything simmer on low heat. We season the soup with salt, pepper, and a mix of dried vegetables, such as marjoram and basil, which will enrich the flavor of the dish.

As the soup boils, the flavors blend, and the vegetables become tender. When we find that all the ingredients are well cooked and the soup has reduced to the desired consistency, we take the pot off the heat. Finally, we add freshly chopped dill and tarragon, whether fresh or dried, to give a fresh and vibrant taste. We mix well, allowing the flavors to meld for a few minutes, and then serve the soup hot, perhaps alongside a slice of fresh bread or a spoonful of sour cream for added flavor. This bean soup recipe with ribs is not just food, but also a perfect blend of tradition and authentic flavors.
