Delicious strudels
To prepare a delicious strudel, we start by mixing 600 grams of flour with 200 grams of lard, ensuring that the ingredients combine evenly. We then add a pinch of salt, the two egg yolks, and enough sour cream, being careful not to make the dough too sticky. Our goal is to obtain a compact dough that is easy to shape. After we have obtained the dough, we divide it into four equal parts, each part representing a sheet of strudel.
The next step involves rolling out each portion. We take one piece of dough and roll it out as thin as possible, using a rolling pin or simply with our hands. Once we have obtained a thin sheet, we spread the surface with 50 grams of melted margarine, ensuring it is evenly distributed. Once the sheet is greased, we carefully roll it up, forming a tight roll. We repeat this process with the other three pieces of dough. After all have been rolled, we place them in the fridge for about two hours, during which time the dough will harden and become easier to handle.
After the resting period, each roll is cut into six equal pieces. Each piece obtained is stood upright and rolled out again, resulting in a thin sheet that can be filled with various fillings, depending on everyone's preferences. These fillings can vary from sweet or savory cheese to grated apples or sour cherries, offering a wide range of flavors and textures. Thus, we obtain a total of 24 pieces of strudel, each with its unique filling.
After all the strudels are filled, we carefully place them in a baking tray lined with parchment paper or aluminum foil, making sure to leave enough space between them for even baking. We place them in the preheated oven and let them bake until they turn golden brown, achieving a beautiful shade of golden yellow. The baked strudels will have a crispy texture on the outside and a soft and savory interior, perfect for serving warm, alongside a glass of sour cream or a scoop of ice cream. Preparing this dessert is not only a culinary pleasure but also a true art that will delight any table.
