Step 1: Preparing the meat
Start by cleaning the pork shoulder of skin and fat, then cut it into uniform cubes for even cooking. Place the cubes in a pot with cold water and add a teaspoon of salt. Boil the meat over medium heat for about 45 minutes, until tender. Once cooked, let it cool, then pass it through the meat grinder twice to achieve a fine texture.

- Make sure the water is cold at the beginning to keep the meat juicy.
- If you don’t have a meat grinder, you can use a blender, but be careful not to turn the meat into paste.
Step 2: Preparing the liver
The pork liver should also be cleaned of membranes. Boil it in salted water for about 15 minutes, then let it cool. Once cooled, chop it finely and add it to the minced meat.
Step 3: Combining the ingredients
In a large bowl, beat the eggs with the sour cream, adding salt and pepper to taste. To this mixture, add the chopped green onions, green garlic, dill, and parsley. Mix until well combined, then pour the mixture over the minced meat and pork liver. Mix well to combine.
Step 4: Baking the meatloaf
Preheat the oven to 180°C. Grease a baking tray with butter, ensuring it is well covered to prevent sticking. Pour the mixture into the tray and level the surface. Place the tray in the oven for about 60 minutes, or until the meatloaf is golden and slightly browned on the edges.
