Homemade Vanilla Extract

 Ingredients: 10 vanilla pods (high quality; example grade Bourbon-Madagascar) 500 ml vodka (lower quality but with a concentration of 40%)

To prepare homemade vanilla extract, I propose a simple yet flavorful recipe that will add a touch of magic to any dessert recipe. We start by ensuring that we have all the necessary ingredients and utensils ready. In a sterilized glass jar or bottle, meaning thoroughly cleaned, we will add 250 ml of good quality vodka. It is essential that the chosen vodka is pure, without added flavors, as this will extract the rich flavors from the vanilla pods.

The next step is to deal with the vanilla pods. Choose 2-3 vanilla pods, preferably of high quality, to obtain an extract with an intense and complex flavor. Using a small, sharp knife, carefully split the vanilla pods. Make sure not to cut them completely, but just to open them lengthwise to expose the aromatic seeds inside. With the help of a knife or spatula, gently scrape the seeds from inside the pod. These seeds are what will give the vanilla extract its characteristic flavor.

After obtaining the seeds, add them to the jar with vodka, along with the split vanilla pods. Seal the jar tightly with a lid and shake it well for a few seconds to mix the ingredients. It is important that the mixture is uniform so that the flavor develops optimally.

After this process, place the jar in a dark, cool place, away from direct light, which could affect the quality of the extract. It is recommended to shake the jar once a week to facilitate the extraction of flavors from the vanilla pods. Over time, you will notice how the color of the vodka becomes darker, and the flavor intensifies.

It is essential not to open the lid of the jar until the maceration process is complete, as exposure to air can cause alcohol evaporation and affect the quality of the extract. After about 6-8 weeks, the vanilla extract will be ready for use. At this point, you can strain the extract, removing the vanilla pods, or you can leave it in the jar to continue infusing and developing an even deeper flavor. This homemade vanilla extract will become an indispensable ingredient in your kitchen, bringing an authentic and refined taste to cakes, creams, and many other culinary delights.
