Preparation time: 30 minutes
Cooking time: 20 minutes
Total: 50 minutes
Servings: 4

Dough ingredients:
- 350 g flour
- 1 egg
- 1 tablespoon olive oil
- 1 teaspoon dried vegetables
- 1 teaspoon dried spice mix (oregano, thyme, pepper, bay leaf, basil)
- A pinch of salt

Filling ingredients:
- 1 boneless chicken breast (about 300 g)
- 6-7 fresh mushrooms
- 1 red bell pepper
- 1 red onion
- Salt and dried spices to taste
- 1 teaspoon dried vegetables
- Olive oil for sautéing

Decorating ingredients:
- Sweet paprika
- Fresh oregano sprigs for garnish

Preparation:

1. Start by making the dough. In a large bowl, sift the flour and add the egg, olive oil, dried vegetables, spice mix, and a pinch of salt. Using a spatula or your hands, begin kneading the mixture until you obtain an elastic and homogeneous dough. It should be easy to shape but not sticky. If the dough is too soft, add a little more flour.

2. After kneading the dough, divide it into four equal pieces. Cover each piece with a damp towel and let it rest for 10 minutes. This will help relax the gluten, making it easier to roll out.

3. Meanwhile, prepare the filling. Peel and finely chop the onion. Dice the red bell pepper and slice the mushrooms. In a large skillet, heat a little olive oil. Add the onion and sauté over medium heat until it becomes translucent, then add the bell pepper and mushrooms. Cook the vegetables for 5-7 minutes, stirring constantly.

4. Once the vegetables have softened, add the diced chicken breast. Season with salt and dried spices and continue cooking the mixture for 10 minutes, until the chicken is fully cooked. Once the filling is ready, let it cool slightly.

5. Now, return to the dough. Take each piece of dough and roll it out with a rolling pin into a thin disc about 25 cm in diameter. On each disc, place a portion of the chicken filling, distributing it evenly.

6. Begin forming the pouches. Gather the edges of the dough towards the center, forming small bags, which you tie with cooking twine, making sure not to let the filling escape.

7. In a large pot, add water with a tablespoon of salt and wait for it to boil. When the water is boiling, carefully immerse the pouches using a slotted spoon to avoid breaking them. Allow them to boil for 7 minutes over low heat.

8. While the pouches are boiling, preheat the oven to 180°C. Grease a muffin tin with olive oil and, using a spatula, carefully place one pouch in each mold. Bake the pouches in the oven for 10 minutes, until they become golden and browned.

9. Once they are ready, carefully remove the pouches from the molds and place them on a platter. For an extra burst of flavor, sprinkle sweet paprika on top and garnish with fresh oregano sprigs.

10. Enjoy your meal! These pouches not only look wonderful but are also delicious. Perfect to be served with a fresh salad or a yogurt sauce, they turn any meal into a celebration.

- Make sure the dough is well-kneaded, as it will be easier to shape.
