Green Salad Soup with Sausages
Ingredients: -350 g smoked sausages -1 head of lettuce -1 medium onion, finely chopped -4 cloves of garlic, finely chopped -1 carrot -1 parsley root -200 g short pasta -4 tablespoons lemon juice -350 ml sour cream or 500 ml full-fat yogurt -1 tablespoon flour -3 egg yolks -2 tablespoons chopped herbs (dill and/or parsley) -oil -salt -pepper
To prepare a delicious and flavorful soup, start by slicing the sausages into rounds or smaller pieces, depending on your preferences. Heat a little oil in a pan and fry the sausages until they become golden and crispy, then set them aside to add later to the soup. This step will add a savory note to the dish.
Once you are done with the sausages, wash the lettuce well, leaf by leaf, to remove any impurities. Place the lettuce in a strainer to drain, then you can chop or tear it into suitable pieces. This will bring an extra freshness and texture to the soup.
Next, finely chop the onion and sauté it in the same pan where you fried the sausages, in a little heated oil. Let the onion soften and become translucent, then add the crushed garlic to release its aroma. This mixture will provide the soup with a rich flavor base.
Add the sliced or grated vegetables and continue to sauté the mixture until they are almost cooked. Once the vegetables are tender, transfer everything to a pot and add 4 liters of water. Let it boil for 10 minutes over medium heat, starting from the moment the water begins to boil.
Halfway through this time, add the fried sausages, your favorite pasta, and the lettuce. Season with lemon juice to taste, to add a touch of acidity that will balance the flavors.
Meanwhile, prepare the liaison from egg yolks, sour cream (or yogurt), and flour. Mix well until you have a homogeneous composition, then dilute it with the warm soup, being careful not to make it too hot to avoid curdling the eggs. Reduce the heat to low and add the mixture to the soup in a thin stream, stirring continuously. It is very important not to let the soup boil at this moment.
Season the soup with salt and pepper to taste, and add the finely chopped herbs. Mix everything well and turn off the heat. Let the soup sit covered for 5 minutes, for the flavors to blend and intensify.
Serve the soup hot or at room temperature, in deep bowls, garnished with a little greenery on top for a more appetizing appearance. This soup will surely be a delight, perfect for cool days or for any occasion when you want to indulge in a comforting dish. Enjoy your meal!
