Cheese Pie
To prepare a delicious cheese pie, we will start by ensuring we have all the necessary ingredients at hand. We will use telemea cheese, sweet cheese, eggs, sour cream, butter, sugar, and pie sheets. First, we take the telemea cheese and grate it on a fine grater or, if we prefer, we can blend it in a blender until we achieve a smooth texture. This will add a savory taste to our pie.
In a large bowl, we will combine the sweet cheese with the grated telemea. Then we add the eggs, sour cream, salt, and sugar. It is important to mix all the ingredients well to obtain a uniform and creamy composition. This filling will be the delicious base of our pie. After we have homogenized the composition, we set the bowl aside and prepare to assemble the pie.
In a pan, we melt the butter, being careful not to let it boil, just to melt completely. Using a brush, we grease a taller baking dish with melted butter, making sure that every corner is evenly covered. Now, we will start placing the pie sheets. We put a first layer of sheets, which we grease with butter, then continue to add another layer of sheets, grease again, and repeat this process until we have three layers of sheets.
After we have the three layers, we use a ladle to add some of the cheese mixture to the dish. We put about three ladles of filling and, after spreading it evenly, we repeat the operation until we finish all the sheets and the composition. It is important that the last layer is made of pie sheets, which we will grease again with melted butter to achieve a golden and crispy crust.
Once assembled, we put the dish in the oven, set to low heat, and let the pie bake slowly until it becomes golden on the surface. The baking time varies, so it is good to keep an eye on it. When the pie is ready, we take it out of the oven and, for an extra touch of flavor, we sprinkle it with powdered sugar. It can be served both warm and cold, being just as delicious in both versions.
