The Soup of Things
Smoked meat, in my case smoked sausages that I cut into pieces about 3-4 cm long, is the main ingredient of this delicious and comforting recipe. We start by placing the pieces of meat in a large pot, adding about 3 liters of cold water. It is essential to use cold water to allow the flavors to gradually reveal themselves during boiling. If we notice that the water is not boiling fast enough, we can add a little more water so that we have a generous liquid in which to boil the ingredients.
After the meat has boiled for about 30 minutes, we add the potatoes, which we cut into suitable cubes, about the size of a currant. They will add consistency and flavor to our soups. Meanwhile, in a pan, we heat 2 tablespoons of oil and lightly fry 1 tablespoon of flour. The goal is to obtain a roux, which will thicken the soup and give it a creamier texture. After the flour has started to sizzle lightly, we add 1 teaspoon of sweet paprika, stirring quickly to avoid burning.
When the potatoes are cooked, we add the roux obtained to the soup, stirring well to integrate it evenly. Separately, in a bowl, we will mix 2 egg yolks with 1 tablespoon of grated horseradish in vinegar and 400 g of sour cream. It is important to mix these ingredients well until homogeneous. Then, gradually, we thin our mixture with the liquid in which the smoked meat is boiling, adding a little soup at a time to avoid curdling the yolks. After obtaining a fine composition, we pour it back into the pot with the soup and let it come to a boil.
To add a note of freshness and a tangy taste, we can integrate lemon juice, thus adjusting the acidity of our soups to our preference. Finally, we taste the soup and add salt as needed, ensuring that each ingredient contributes to a perfect balance of flavors. This smoked meat soup, with its rich flavors and creamy texture, is an excellent choice for cool days, providing us not only with nourishment but also with comfort. Enjoy your meal!
