Fresh salad is a versatile and flavorful dish, perfect to be served as an appetizer or as a side dish. We start by carefully separating the salad leaves, ensuring that each leaf is clean and free of impurities. We wash the leaves under a stream of cold water, making sure to rinse them well to remove any traces of pesticides or dust. After washing, we let the leaves drain in a colander to remove excess water.
In the meantime, we take care of the other ingredients. The green onion is carefully peeled, trimming each end to remove the dry parts. We chop it finely, ensuring we get thin rings that will add a spicy note to the salad. For the bell pepper, we choose a fresh and juicy one, removing the seeds and stem. We slice it into thin strips so that it integrates perfectly into the vegetable mix.
For the cherry tomatoes, we look for ripe and juicy ones, wash them well, and cut them into quarters, being careful to retain as much of their flavorful juice as possible. The cheese, an essential ingredient to add creaminess to the salad, is cut into cubes, thus preparing a pleasant contrast of textures.
In a large bowl, we tear the salad leaves, add the chopped green onion, bell pepper, cherry tomatoes, and cheese cubes. It is important to mix the ingredients gently, so as not to crush the delicate vegetables.
We prepare the dressing that will bind all these delicious ingredients together. In a container, we combine mustard with honey, adding a pinch of salt, a bit of vinegar, and extra virgin olive oil. We mix well until the dressing becomes smooth and creamy.
We sprinkle salt over the salad and mix gently to evenly distribute the seasoning. Then, we add the dressing, mixing again so that each ingredient is coated with this flavorful dressing.
The boiled eggs, which we peel carefully, are cut into quarters and elegantly placed on top of the salad, adding not only an attractive appearance but also a source of protein.
