Pasta with Green Beans

 Ingredients: -400g green beans -300g short pasta -1 onion -4 cloves of garlic -olive oil -250g tomato puree or paste (I prepared fresh paste at home from 3 tomatoes) -salt -pepper

Green beans are a versatile and healthy ingredient, perfect for a quick and delicious meal. We start by trimming the green beans, removing the ends, and then washing them thoroughly under cold running water. It is important to keep the beans whole, as this helps retain their crunchy texture during cooking.

In a fairly large pot, we bring water to a boil. When the water starts to boil, we add the green beans, letting them cook for about 5-7 minutes, or until they are more than halfway tender. Then, we add the pasta. It is essential that the pasta is cooked 'al dente', meaning it should have a firm texture when bitten, so it does not disintegrate in the sauce.

Meanwhile, we can prepare the sauce, so that all components are ready simultaneously. We start by peeling the onion and garlic cloves, which we wash and chop finely. In a medium skillet, we add a few tablespoons of olive oil and place it over medium heat. When the oil begins to sizzle, we add the onion and garlic, letting them sauté for a few minutes until the onion becomes translucent and the garlic releases its aromas.

Once the onion is ready, we add the tomato paste, which will give the sauce a vibrant color and rich flavor. We mix well and, to achieve a more fluid consistency, we also add a little water. We season with salt and pepper to taste and let the sauce simmer on low heat, stirring occasionally, until it reduces and thickens. This will take about 10-15 minutes.

Once the pasta and green beans are cooked, we drain them well and add them to the skillet with the sauce. We carefully mix everything, so that the pasta and beans are evenly coated with the delicious sauce. It is important to do this as quickly as possible to ensure everything is served hot.

We serve the dish hot, which can be garnished with a few fresh basil or parsley leaves, adding a touch of freshness. This simple and healthy recipe is perfect for a quick family dinner or even for a lunch at the office. Enjoy your meal!
