Cucumbers in Vinegar I

 Ingredients: cucumbers, wine vinegar, salt, sugar, mustard seeds, bay leaves, peppercorns, carrot, onion, horseradish, dill flower, garlic.

To prepare a delicious cucumber pickle, we start by ensuring we have all the necessary ingredients as well as the right utensils. In an 800-gram jar, we will create a fragrant and colorful mix that will transform plain cucumbers into a true delicacy.

The first step is to slice some fresh carrot rounds, which will add not only a touch of color but also a crunchy texture. Next, we will clean the onion and slice it thinly, making sure to choose an onion with a pleasant taste, not too sharp. Garlic is also essential; a few cloves of garlic will add an extra flavor. After preparing these vegetables, we will add a flower of dill, which is a classic ingredient in Romanian pickles, bringing an unmistakable aroma.

After placing all the prepared vegetables in the jar, we turn our attention to the cucumbers. They must be well washed and young to achieve crunchy pickles. The cucumbers are carefully placed in the jar, leaving a little space to add the remaining ingredients.

Now it’s time to prepare the brine. We pour vinegar into the jar, making sure it reaches one and a half fingers above the vegetables. Then, we add a tablespoon of sugar, which will balance the acidity of the vinegar and contribute to a pleasant taste. Next are the mustard seeds and pepper, which will add extra flavor and a bit of spiciness to the pickles. Along with these, we add a few pieces of horseradish, which will intensify the flavor and help preserve the vegetables.

To complete the preparation, we will dissolve a tablespoon of salt in a liter of water, after which we will pour this mixture into the jar, ensuring that the vegetables are completely covered. Once everything is prepared, we will cap the jars, making sure they are airtight to prevent air from entering.

Next, we head to the oven. We prepare a tray in which we will place the jars, and then we put them in the preheated oven at medium heat, where we will leave them for 30 minutes. This sterilization process will ensure that our pickles remain fresh and tasty for a long time. After the time has passed, we take the jars out of the oven and let them cool to room temperature. Then, we can enjoy a delicious snack, perfect for summer meals or to accompany our favorite dishes.
