To prepare a delicious vegetable salsa, start by washing the tomatoes well under a stream of cold water. It is important to choose ripe, but firm tomatoes to achieve a pleasant texture. Once you have washed them, lightly score the base of each tomato with a sharp knife. This will facilitate peeling later. Then, bring a pot of water to a boil and, when it is boiling, add the tomatoes to blanch them for about 30 seconds. After this time, immediately transfer them to a bowl of cold water to stop the cooking process. Once cooled, carefully peel them, and then cut them into uniform-sized cubes.
Next, take care of the bell peppers. Remove the stems and seeds, then wash them under cold water. Cut them into long strips, making sure to use a sharp knife to make this easier. Now, take a large frying pan and add a generous amount of olive oil, which you will heat over medium heat. Add the finely chopped onion and crushed garlic, stirring frequently. Let them sauté until the onion becomes translucent and starts to golden, thus developing their flavors.
Once the onion and garlic are harmoniously combined, add the strips of bell pepper and the cubes of tomato to the pan. Mix the ingredients well and cover the pan with a lid. Let the mixture steam for about 10 minutes, stirring occasionally to prevent sticking and ensure even cooking. Finally, add a few drops of wine vinegar to intensify the flavors, then adjust the taste with salt and pepper to your liking.
To add extra flavor, feel free to add some sliced green or black olives, or even some capers, which will bring a touch of freshness and a slightly salty taste. Mix everything well and let the salsa cool slightly before serving. This recipe is perfect as a side dish, but can also be enjoyed as a fresh salad alongside toasted bread or grilled fish.
