- 125 ml milk

- 100 g dark chocolate
- 50 ml chocolate liqueur
- 350 ml liquid cream
- 10 g gelatin

*For the syrup:*
- 2 tablespoons sugar
- 200 ml water
- 30 ml chocolate liqueur

*For the glaze:*
- 250 g chocolate (milk or dark)
- 150 ml liquid cream

Preparation:

1. Preparing the base:
Start by separating the egg whites from the yolks. In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the sugar and vanilla sugar, continuing to mix until the mixture is glossy and firm. At this point, add the oil and egg yolks, gently folding with a spatula.
In another bowl, combine the flour, cocoa, and baking powder, sifting the mixture twice to eliminate lumps. Fold the dry ingredients into the egg mixture, mixing carefully from top to bottom to maintain air in the batter.
Grease and flour a pan, then pour the batter into the pan. Bake in a preheated oven at 180°C for 25-30 minutes or until a toothpick comes out clean. Let it cool in the pan, then cut it in half horizontally.

2. Strawberry cream:

Heat the milk with the vanilla sugar in a saucepan. In a bowl, beat the egg yolks with the sugar until creamy and doubled in volume. Gradually add the hot milk, stirring continuously to prevent curdling. Place the mixture over low heat for 2-3 minutes, stirring constantly, then add the broken chocolate and stir until melted and the cream thickens slightly.
Remove the cream from the heat, add the liqueur and hydrated gelatin, stirring well until dissolved. Let the cream cool for 5-10 minutes, then fold it into the whipped cream.

5. Assembling the cake:
On a serving platter, place the first half of the base and soak it with half of the syrup. Spread 2-3 tablespoons of chocolate cream over the base. Remove the strawberry cream from the freezer and invert it into the center of the base.
Mount a removable ring around the base and pour in the chocolate cream, leveling it well. Place the second half of the base, soak it, then cover the cake with foil and place it in the freezer for at least 3 hours.

6. Glazing:
Carefully remove the removable ring from the cake. Prepare the glaze by melting the chocolate together with the liquid cream in a double boiler. Stir well until smooth. Pour the glaze over the cake and decorate as desired.
