Preparing the Cake

1. Preparing the Base
- In a large bowl, separate the egg yolks from the egg whites. Beat the yolks with 400 g of sugar until you get a fluffy, light-colored cream. This is the moment to add your preferred flavor (vanilla or rum).
- Add the 9 tablespoons of water and mix well.
- In another bowl, beat the egg whites until foamy. They should be firm and form peaks.
- Slowly fold the beaten egg whites into the yolk mixture, using a spatula to avoid deflating the air.
- Sift the flour together with the baking powder, then gradually add them to the mixture, mixing carefully.

2. Baking the Base
- Prepare the baking tray by lining it with baking paper. Pour the mixture into the tray and level it evenly.
- Preheat the oven to 180°C (medium heat). Bake the base for 30 minutes or until it passes the toothpick test (the toothpick should come out clean).
- Once the base is baked, remove it from the oven and let it cool slightly.

3. Preparing the Syrup
- In a pot, bring 500 ml of water to a boil with 300 g of sugar and the 4 tablespoons of cocoa. Stir constantly until the sugar dissolves and thickens slightly.
- Finally, add the butter and stir until completely melted. The syrup should be warm, but not hot.

4. Assembling the Cake
- After the base has cooled slightly, pour the hot syrup over it. Let the cake absorb the syrup for a few hours or, ideally, overnight.
- If desired, you can also add ground walnuts inside the base to enhance the flavor. These can be added to the flour mixture.

Serving
This walnut cake is wonderful served plain, but it can also be accompanied by a scoop of vanilla ice cream or a dollop of sweet cream for a delicious contrast. Add an elegant touch with a few pieces of walnut sprinkled on top for decoration.

Variations and Practical Tips
- Adding Fruits: You can experiment with adding berries or sliced bananas to the syrup for an explosion of flavors.
- Whole Wheat Flour: For a healthier version, you can use whole wheat flour instead of white flour. This will add extra nutrients and an interesting texture.
- Coffee Syrup: For coffee lovers, replace some of the water with freshly brewed coffee for a more intense flavor.
