Ingredients: For 1 bottle of 750 ml: -500 g peeled garlic cloves -1/3 tablespoon coarse salt -375 ml 9 degree vinegar -3 pcs. chili peppers -4 bay leaves -125 ml water -100 g sugar
To prepare a special delicacy, start by boiling a pot of water with salt, ensuring that the salt dissolves completely. This step is essential as it will help enhance the flavors of the garlic. Add a few peeled garlic cloves and let them boil for about five minutes. This stage will not only soften the garlic but also prepare it to absorb the flavors from the ingredients with which it will be layered later.
After five minutes, drain the garlic and let it cool on a clean towel or in a bowl. Once the garlic has cooled, prepare your glass bottles, which must be perfectly clean and sterilized to prevent contamination. In the bottles, layer the garlic cloves with fresh chili peppers and bay leaves. This combination will add a spicy note and a rich flavor to your dish.
In a separate pot, pour the vinegar and dilute it with 125 ml of water. Bring the mixture to a boil, adding the sugar as well. Carefully pour the hot vinegar over the garlic cloves, making sure to cover the entire composition in the bottle. Ensure that all the ingredients are well immersed in the liquid, and the flavors will combine perfectly. After pouring the vinegar, seal the bottles tightly, ensuring there are no leaks. Place the bottles in a dry spot where they can sit in the steam until they cool completely. This is an essential step as it will allow the flavors to intensify and penetrate the garlic.
Once the bottles have completely cooled, store them in a cool, shaded place, away from direct sunlight.
