Preparing the tart
Step 1: Preparing the nettles
1. In a pot, add about 800 ml of water and a teaspoon of salt. Bring the water to a boil.
2. When the water is boiling, add the fresh nettles. Cover the pot and let them boil for 3-5 minutes until softened.
3. Turn off the heat and drain the nettles, allowing them to cool slightly.
Step 2: Preparing the tart mixture
1. In a pot, melt 50 g of butter over low heat. Add 2 tablespoons of flour and quickly mix to create a roux.
2. Add the sour cream and yogurt, stirring vigorously until you achieve a smooth composition. Turn off the heat.
3. Let the mixture cool, then transfer it to the food processor bowl.
4. Add the drained nettles, minced garlic cloves, and one raw egg yolk. Blend well until you obtain a fine paste.
5. In another bowl, mix the obtained paste with 5 tablespoons of flour and a pinch of butter. A moldable dough will form.
Step 3: Shaping and baking the tarts
1. Preheat the oven to 180°C.
2. Using a spoon, fill the mini tart molds with the obtained mixture. Arrange the dough well to evenly cover the mold.
3. Place the mini tarts in the oven and bake for 20-25 minutes, or until golden.
4. Once baked, let them cool in the molds for a few minutes, then carefully remove them.
Preparing the cheese cream
1. In a bowl, mix 1 teaspoon of butter with 4 triangles of cream cheese.
2. Add the grated boiled egg yolk, then season with both types of Kotanyi spice mixes. Mix well until you obtain a smooth cream.
3. Using a piping bag, decorate the mini tarts with the cheese cream. You can finish with green onion leaves for a fresh look and delicious aroma.
Useful tips:
- Choose fresh nettles: Buy nettles from reliable sources to ensure they are clean and nutrient-rich. Avoid nettles that have started to wilt.
