Autumn Stew
Ingredients: eggplant, bell peppers of different colors, onion, carrot, a handful of green beans, hot pepper (optional), 1 tbsp Delikat, 3 tbsp olive oil, 4 cups water, 3 tbsp tomato paste, parsley.
To prepare a delicious and flavorful vegetable stew, the beginning is essential. We clean all the vegetables we will use, ensuring they are fresh and of good quality. We start by carefully washing the onion, carrot, peppers, eggplant, and beans, then cut them into suitable pieces. To start the preparation, we put a cup of water and a tablespoon of oil in a pot over medium heat. The oil will help caramelize the vegetables, giving them a rich flavor.
We chop the onion finely and add it to the pot with the heated water, letting it sauté for a few minutes until it becomes translucent. Next, we cut the carrot into thin rounds or cubes, depending on preference, and add it alongside the onion. Once the carrot has started to soften, it is time to add the beans, which we chop finely. This ingredient will provide a pleasant texture and enhance the flavor of the dish.
After a few minutes of boiling, we add another cup of water to ensure a moist environment for the vegetables to cook evenly. Then, we cut the pepper into thin strips and the eggplant into cubes, adding them to the pot. It is important to ensure that all the vegetables are well integrated into the mixture. We cover the pot with a lid and let it simmer on low heat, stirring occasionally, until the vegetables become soft and the flavors blend perfectly.
When the vegetables are cooked, we add the chopped hot pepper for an extra kick and the remaining two tablespoons of oil. This will add a touch of richness to the dish. We continue by adding Delikat, which will intensify the flavors, and the tomato paste, which will give a beautiful color and a savory taste. We mix everything well and let the stew boil for a few minutes for the flavors to combine perfectly.
To finish, we finely chop the fresh parsley, which will add a touch of freshness and color. We add it to the stew just before serving, stirring gently. This vegetable stew is not only a healthy option but also extremely versatile, as it can be served as a main dish or a side. Enjoy your meal!
