Coconut cookies are a perfect choice for a quick and tasty snack, ideal to be enjoyed alongside a cup of tea or coffee. This simple and delicious recipe, with a preparation time of just 20 minutes and a baking time of approximately 12-15 minutes, will bring a fragrant delight to your table. The recipe yields about 20 servings, enough to share the joy with loved ones.
Ingredients:
- 140 g margarine
- 140 g lard
- 140 g sugar
- 3 eggs
- Flour as needed (approximately 300 g)
- Essences (vanilla or almond, to taste)
- 100 g coconut (for decoration and in the mixture)
- Baking paper
- Oil for greasing
Step by step preparation:
1. Preparing the ingredients: Make sure all ingredients are at room temperature. This will help in homogenizing the mixture. Measure 140 g of margarine and lard and place them in a large bowl.
2. Mixing the ingredients: Add the sugar over the margarine and lard. Use a mixer or spatula to mix the ingredients until you obtain a creamy mixture. Add the 3 eggs, mixing well after each addition. Then, pour in the chosen essence and mix again.
3. Incorporating the flour: Start adding flour gradually, mixing with a spatula. The flour should be added until you obtain a dough that is easy to shape. The dough should not be too sticky, so adjust the amount of flour according to the desired texture.
4. Adding the coconut: Incorporate 50 g of coconut into the dough to add flavor, while the remaining 50 g will be used for decoration.
5. Shaping the cookies: On a floured surface, roll out the dough to a thickness of about 2 cm. Use cookie cutters or a glass to cut the dough into desired shapes.
6. Preparing the baking tray: Place baking paper in the baking tray and grease it with a little oil to prevent the cookies from sticking.
7. Placing the cookies: Arrange the cut cookies on the tray, leaving a small space between them. Beat an egg and brush each cookie with a kitchen brush, then sprinkle the remaining coconut on top.
8. Baking: Preheat the oven to 180°C and bake the cookies for 12-15 minutes, or until they become slightly golden at the edges, but do not let them brown too much.
9. Cooling and serving: After removing them from the oven, let the cookies cool in the tray for 5 minutes, then transfer them to a rack to cool completely.
Serving suggestion: These coconut cookies are excellent when served warm, alongside a cup of black tea or a fragrant coffee. You can also add a teaspoon of fruit jam for a sweet-sour contrast.
