To prepare these delicious cookies, we start by creaming the butter until it becomes a fluffy and airy foam. It is essential that the butter is at room temperature to achieve an optimal texture. Once the butter is well beaten, the next step is to deal with the egg. We beat the egg with a fork or a mixer, then add powdered sugar, salt, and orange essence. Mixing the ingredients will bring a wonderful aroma and a delicate sweetness to our cookies. Once we have a homogeneous mixture, we pour the composition over the whipped butter.

Now, it is time to gradually add the flour, mixing continuously until we obtain a uniform and homogeneous dough. It is important not to add all the flour at once, but to integrate it gradually to prevent lumps from forming. Once the dough is ready, we divide it into two equal parts. In one of them, we add the cocoa and mix well, so that we obtain a uniform texture with an intense chocolate color.

The next step consists of rolling out the two sheets of dough. It is recommended to use a surface sprinkled with a little flour to avoid sticking. The white sheet will be rolled out first, and then, using a plastic wrap, we will easily transfer the black sheet on top of the white one. This technique helps to maintain the integrity of the dough, which can be quite fragile. After the two sheets are layered, we gently roll them up with the help of the wrap, forming a compact roll.

The dough is wrapped in plastic wrap and left in the fridge for at least 30 minutes. This step is essential because once hardened, the dough will be much easier to cut. After this cooling time, we take the dough out and start cutting it into slices about 1 cm thick. These slices are carefully placed on a baking tray lined with parchment paper, taking care not to leave too much space between them, as they do not rise much during baking.

We preheat the oven to a suitable temperature and place the tray with cookies inside. Baking takes about 12 minutes, and the cookies are ready when they start to turn lightly golden. It is important not to leave them too long, as they can burn quickly. Once baked, we let them cool on a rack, where they will retain their crunchiness. This sweet and aromatic treat is perfect to be served alongside a cup of tea or coffee, bringing a smile to the face of any sweet lover.
