Apple Cake
When I have apples that I want to use quickly, I usually make this simple cake. I never mix two trays at once because it yields quite a bit of batter to fill a standard tray. It's the kind of dessert you make without any hassle, especially when you need something quick for coffee or a weekend treat.
Quick Info
Total time: about 40 minutes
Preparation time: 20 minutes
Baking time: 20 minutes
Servings: 8-10
Difficulty: easy
Recipe type: apple cake, quick dessert
Ingredients
12 tablespoons of sugar
12 tablespoons of oil
4 eggs
2 cups of flour
1 packet of baking powder
3 teaspoons of cinnamon
4 teaspoons of ground nuts
4-5 apples (the apples should be peeled and diced)
Preparation method
1. In a large bowl, put the eggs, sugar, and oil. Whisk them well, just enough to combine the ingredients.
2. Add the flour and baking powder. I activate the baking powder with a little vinegar (directly in a teaspoon or in a small bowl) before adding it to the other ingredients.
3. Add the cinnamon and ground nuts. Mix again, not too much, just enough to make everything homogeneous.
4. Peel and dice the apples. Add them directly to the batter and mix gently.
5. Prepare the tray: grease it with oil and dust it with flour. Pour all the batter into the tray and level it slightly.
6. Bake the cake in the oven at medium heat for 20 minutes. Usually, after 20 minutes, I check with a toothpick in the center. If nothing sticks to it, the cake is ready.
7. Take it out of the oven and while it's warm, sprinkle a little powdered sugar on top.
Why I make the recipe often
It uses ingredients I always have on hand and is suitable for any season. The prep time is short, and I don’t need a mixer. The batter holds up well even the next day. It’s the kind of dessert that doesn’t need special presentation.
Tips and variations
Tips
- I use firmer apples so they don’t completely soften while baking.
- If you see that the apples have released a lot of juice, you can drain them a bit before adding.
- The tray shouldn’t be too large; otherwise, the cake will be too thin.
Substitutions
- You can use brown sugar if you want a slightly different taste.
- Nuts can be replaced with ground almonds or omitted altogether.
Variations
- If you don’t want cinnamon, you can leave it out completely.
- It also works with pears if you don’t have apples on hand, but the final texture will be a bit softer.
Serving ideas
- It can be eaten plain, with powdered sugar.
- Sometimes I cut it into cubes and serve it with plain yogurt for breakfast.
- It goes well with coffee or tea.
Frequently asked questions
1. How big should the apple pieces be?
I cut them about 1-2 cm, so they don’t turn into mush after baking.
2. Can it be made without nuts?
Yes, you can skip the nuts. The cake will turn out fine without them.
3. What size should the tray be?
I use a standard tray of about 22x30 cm. You can adjust, but it shouldn’t be too big.
4. Can I reduce the amount of sugar?
Yes, if you want a less sweet version. Reduce to 8-10 tablespoons and check the taste of the batter before baking.
5. Can the cake be made with a different type of flour?
Using whole wheat flour will make it a bit denser, but you can try half and half with white flour.
Nutritional values (estimates)
One serving (out of 10) has about 250-280 kcal, depending on the size of the apples and how much sugar is used. The cake contains carbohydrates (from flour and sugar), fats (from oil and nuts), and proteins (from eggs). Fiber comes from apples and nuts. The calculations are approximate; for precise values, the ingredients should be weighed.
Storage and reheating
It can be kept at room temperature, covered, for up to 2 days. For longer storage, it can be kept in the fridge, but the texture changes. Reheating is not necessary, but if you want, it can go in the microwave for a few seconds. The cake is not ideal for freezing because the apples change texture when thawed.
