Special Homemade Sausages
To prepare these delicious sausages, we will start with the ingredient preparation stage. In a heated pan, we add a generous amount of oil and let the finely chopped onion sauté over medium heat. It is important to stir constantly to avoid burning until the onion turns golden and translucent, releasing its flavors. This will give a special taste to our mixture.
Meanwhile, we prepare the meat. Choose quality pork meat, which will add extra flavor. It is minced using a meat grinder, taking care to use the coarse plate to achieve the right texture. The liver, on the other hand, is cut into small pieces with a sharp knife to integrate perfectly into the final mix.
In a large bowl, we combine the minced meat with the chopped liver, sautéed onion (drained of oil to avoid excess fat), beaten eggs, sour cream, salt, and pepper. It is essential to mix all the ingredients well so that the flavors blend harmoniously. The spices can be adjusted to personal taste; you can also add other herbs, such as dill or thyme, to intensify the flavor.
Once the mixture is homogenized, we move on to stuffing the pork casings. Using a stuffing tube, it is important to be careful not to pack the mixture too tightly into the casings, leaving a little air inside to prevent them from bursting during the cooking process. At the ends of the sausages, we tie them with string to ensure that the filling does not come out during boiling.
The formed sausages are then boiled in a pot of boiling water, allowing them to cook for about 10 minutes. After this stage, we carefully remove them and place them on a wooden rack to cool. This step is crucial as it allows the sausages to maintain their shape and not become too soft.
To achieve an authentic taste, the sausages are smoked for five days, one hour each day. Smoking adds a unique flavor and beautiful color, and the time spent in the smoke can be adjusted according to personal preferences; some prefer a subtler taste, while others opt for a more intense aroma. After the smoking process is complete, the sausages are ready to be enjoyed, whether grilled or used in various recipes.
