Bohemian Cake

 Ingredients: Batter: 5 eggs 8 tablespoons flour 8 tablespoons sugar 3 tablespoons cold water 3 tablespoons cocoa salt Cream: 500 ml liquid whipped cream 1 egg 100 g butter 3 tablespoons ness 8 tablespoons sugar Garnish: 400 ml liquid whipped cream grated chocolate Syrup: 7 tbsp sugar 200 ml water 1 vial rum essence

The base for this delicious dessert starts with the careful separation of egg whites from yolks. In a large bowl, the egg whites are beaten with a pinch of salt, which helps stabilize the foam. Once the egg whites start to form bubbles, sugar is gradually added, continuing to mix until a shiny and stiff foam is achieved that forms firm peaks. This is the crucial stage, as well-beaten foam will give the base a fluffy and airy appearance.

Once the egg whites are ready, we add water, yolks, flour, and sifted cocoa one by one, carefully mixing to avoid losing the air incorporated into the foam. It is important to ensure that all ingredients are well integrated, but without over-mixing the composition. Once we obtain a homogeneous paste, we grease a round pan with butter and sprinkle flour on the bottom to prevent sticking. The mixture is poured into the pan and placed in a preheated oven at 180 degrees Celsius. The base is ready when it easily pulls away from the edges and passes the toothpick test – it should come out clean.

While the base cools, we can prepare the delicious cream. In a pot over low heat, we add butter, egg, sugar, and instant coffee. It is essential to stir continuously to avoid lumps, until the ingredients are perfectly incorporated. Once we have a smooth cream, we set the pot aside and let it cool. Meanwhile, we whip the heavy cream until it becomes stiff, so it doesn't flow out of the bowl. When the cream has cooled, we carefully add it to the whipped cream, mixing with a spatula to maintain the airy texture.

For the syrup, we melt sugar in water, gradually adding the rum, which will provide a rich and deep flavor. After the base has completely cooled, we place it on a serving platter and generously soak it. Now we add a layer of the coffee cream, smoothing it evenly. Finally, we decorate with a layer of whipped cream and grated chocolate, which will add an extra touch of refinement to the dessert.

Our dessert is now almost ready, but to allow the flavors to blend perfectly, it is recommended to let it chill in the refrigerator for a few hours, and ideally overnight. This way, the taste becomes even more intense, and the texture, extraordinarily fine. This dessert is not only a treat for the taste buds but also a true work of art on the table for any special occasion. Enjoy it with friends and family!
