Kangaroo Biscuits
In a large bowl, add the first six ingredients: flour, sugar, baking powder, a pinch of salt, eggs, and melted butter. Using a dough mixer, mix well until the mixture becomes smooth and lump-free. It is important to achieve a fine texture, as this will influence the consistency of the final product. Once you have a uniform dough, add the next ingredients: warm milk and vanilla extract. Continue mixing on low speed to avoid splattering the dough until all the ingredients are well incorporated.
After the dough is ready, let it rest for about 10-15 minutes. This step is essential, as it allows the gluten to relax, resulting in a fluffier final product. Meanwhile, prepare a baking tray, greasing it with a little butter or lining it with parchment paper to prevent sticking. Preheat the oven to 180 degrees Celsius so that when the dough is ready, it is already at the optimal baking temperature.
Once the dough has rested, pour it into the prepared tray, leveling the surface with a spatula to achieve an even layer. If desired, you can add chocolate chips, dried fruits, or nuts here to customize the recipe to your taste. These ingredients will add extra flavor and texture.
Place the tray in the preheated oven and bake for 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean. Finally, remove the tray from the oven and let the cake cool in the tray for 10 minutes, after which you can turn it onto a plate to cool completely. This cake is perfect for serving at a festive meal or simply when you want to indulge in something sweet. Enjoy each slice alongside a cup of tea or coffee!
