Savarine: The Delight with a Story Soul
Savarines are those delights that entice us with their sweet aromas and fluffy texture, evoking childhood memories and moments spent with loved ones. Invented by two pastry chef brothers from France, Jean and Pierre Julien, these pastries have impressed over time with their simplicity and elegance. Here’s how you can bring this quick dessert to your table with a simple recipe that will transform your kitchen into a corner of paradise.
Preparation time: 30 minutes
Baking time: 20 minutes
Total time: 50 minutes
Number of servings: 12 savarines
Ingredients
- 300 g flour
- 4 egg yolks
- 20 g fresh yeast
- 150 ml warm milk
- 50 g melted butter
- 50 ml oil
- 250 g sugar
- 2 packets of vanilla sugar
- 1 pinch of salt
- 300 g whipped cream
- 200 ml water
- 200 g strawberry jelly (or another preferred flavor)
Step by step for perfect savarines
1. Preparing the starter: Start by activating the yeast. In a small bowl, combine 20 g of fresh yeast with 1 tablespoon of sugar, 50 ml of warm milk, and 50 g of flour. Mix well and let it rise for 10-15 minutes until the starter becomes frothy. This step is essential for achieving a fluffy texture, so don’t rush!
2. Mixing the ingredients: In a large bowl, place 300 g of flour, a pinch of salt, the yolks from the 4 eggs, and the risen starter. In another container, dissolve 150 g of sugar and 2 packets of vanilla sugar in 100 ml of warm milk. Pour this mixture into the bowl with flour and yeast and start mixing. I advise you to use a spatula or a mixer with dough hooks to achieve a uniform texture.
3. Adding the butter: Once the flour is well incorporated, gradually add 50 g of melted butter, continuing to knead. Knead the dough for about 10 minutes until it becomes elastic and smooth. If the dough feels too sticky, you can add a little more flour, but be careful not to overdo it!
4. Let the dough rise: Cover the bowl with a clean towel and let the dough rise in a warm place, away from drafts, for about 1 hour, until it doubles in volume. This is a crucial step for obtaining fluffy savarines.
5. Shaping the savarines: After rising, divide the dough into portions of about 50 g and shape them into balls. Place them in greased savarine molds, leaving space between them to rise. Let them rise for another 15 minutes.
6. Baking: Preheat the oven to 180°C. Bake the savarines for 20 minutes until they become golden and fluffy. Check them with a toothpick; if it comes out clean, they are ready!
7. Preparing the syrup: While the savarines cool, you can prepare the syrup. Boil 200 ml of water with 250 g of sugar and one packet of vanilla sugar until the sugar completely dissolves. Let the syrup cool slightly.
8. Soaking the savarines: Once the savarines have cooled, they await their moment of glory! Use a spoon to soak them well, ensuring the syrup penetrates inside. If you feel they haven’t soaked enough, you can cut a small cap and pour syrup directly inside.
9. Filling with whipped cream: Cut a small cap on top of each savarine and spread it with strawberry jelly. Then, fill the inside with whipped cream. Use a pastry bag for a more elegant effect, but if you don’t have one, a spoon will work just as well.
10. Serving: The savarines are now ready to be enjoyed! You can decorate them with a little jelly on top or with some fresh fruits for a more appealing look. Serve them alongside a fragrant coffee or a fruit tea for a perfect culinary experience.
Useful tips and tricks
- The jelly: If you don’t like strawberry jelly, you can use any other type of jelly, such as raspberry or peach, depending on your preferences.
- The diet version: For a healthier recipe, you can replace the butter with coconut oil or almond butter. You can also reduce the amount of sugar or use natural sweeteners.
- Fresh fruits: You can add pieces of fresh fruits inside the savarines, such as strawberries or peaches, for an extra boost of flavor and texture.
- Snacks: Savarines can be kept in the refrigerator for a few days, but I recommend consuming them as soon as possible to enjoy their freshness.

One savarine contains approximately 200-250 calories, depending on the ingredients used. These sweets are rich in carbohydrates and sugars, providing a quick energy boost. The whipped cream also adds a fat intake, so it’s best to consume them in moderation.
