We start by preparing the necessary ingredients for this delicious recipe. The first step is to peel and finely chop a medium onion, making sure to remove any peel remnants. The onion will add a sweet taste and a pleasant aroma to our dish. Next, we take a few bell peppers, preferably red or yellow to bring a splash of vitality to the plate, and slice them thinly. In a large pot, we put the chopped onion and bell peppers, along with a little water, and let them simmer on low heat. It is important to cover the pot to allow the ingredients to soften and reveal their flavors.

After a few minutes, we add fresh tomatoes, cut into large cubes, and mushrooms, which we slice thinly. The latter brings an interesting texture and a special taste to the dish. We carefully mix all the ingredients, then add salt to taste. We cover the pot again and let it simmer on low heat, making sure to stir occasionally to prevent sticking.

As the vegetables begin to soften, we turn our attention to the eggplants. If we have roasted eggplants, we mash them well or chop them very finely, as for eggplant salad, and incorporate them into the vegetable mixture. They will thicken the dish and add a distinct flavor note. We continue to cook until the mixture reduces and binds, and the flavors blend perfectly.

To add a splash of freshness and complete the taste of the dish, we season with our favorite herbs. I chose oregano, which provides a Mediterranean note, and a little fresh parsley, which adds freshness. We also add a few thin green onion tops, finely chopped, for a color contrast and a subtle taste. Finally, don’t forget to add a handful of frozen porcini cubes, which will transform this dish into a true delicacy. The porcini, with their intense aroma, will provide a deep flavor and a pleasant texture. We let everything simmer for a few minutes until the porcini are well heated, then serve the dish warm, alongside a side of rice or a slice of fresh bread.
