Jam - Fat Red Plums
Ingredients: -1.5 kg of ripe, red plums -1 kg of sugar -juice from 1/2 lemon
Carefully wash the red plums, remove their stems, and drain them well. This step is essential to remove any impurities and ensure a quality final result. In a non-reactive pot, layer alternating layers of plums and sugar, making sure the last layer is sugar. This technique will help extract the juices from the plums, creating a flavorful base for our jam. It is recommended to let the mixture sit for a few hours, but ideally, you should prepare it in the evening and let it sit overnight to allow the fruit to release its natural juice. If the plums are firmer, you can gently crush them by hand to speed up the process.
After the resting time has passed, place the pot on low heat on a stove and let the mixture boil, stirring occasionally. It is important not to raise the temperature too much, as the jam may burn. Let it reduce by half, and then pour everything into a fine sieve. Use a spatula or a wooden spoon to mash the contents, thus separating the pits and skins from the delicious paste that will turn into jam.
Continue boiling the obtained paste until it thickens, stirring constantly to prevent it from sticking to the bottom of the pot. An effective method to check the consistency of the jam is the drop test: take a drop of jam and let it fall onto a cold plate. If it holds its shape and does not spread, it is ready. Towards the end of boiling, add the lemon juice, which will enhance the flavors and help preserve the jam. Let it boil for a few more minutes, stirring constantly.
Once the jam has reached the desired consistency, transfer it hot into sterilized and dry jars, ensuring that no air bubbles remain. Cover the jars with lids and let them cool slowly, preferably between blankets, to form a hardened skin on top, which will help seal in the flavors. After they have completely cooled, seal the jars and store them in the pantry, where they can be kept for moments when you want to enjoy a homemade sweet treat full of flavor. This recipe is not only an excellent way to preserve plums but also an opportunity to enjoy the intense aroma and unmistakable taste of red plum jam.
