Aromatic Cake with Nuts and Raisins

Preparation method:

1. Start by preheating the oven to 180 degrees Celsius. Prepare a loaf pan, grease it with a little oil and line it with flour or baking paper to prevent sticking.

2. Separate the egg yolks from the egg whites. In a bowl, add a pinch of salt and 2-3 tablespoons of sugar over the yolks. Beat them with a mixer until they become a fluffy, light-colored cream.

3. In another bowl, beat the egg whites separately with a pinch of salt until you get a firm foam. It is essential that the bowl is clean and free of grease to achieve a stable meringue.

4. Add the oil and water to the yolk mixture, mixing well. Then, incorporate the flour and baking powder, gently folding with a spatula to avoid lumps.

5. Now, add cocoa, cinnamon, grated orange and lemon zest, rum essence, vanilla, and optionally, a little brandy. Mix well until homogeneous.

6. Finally, fold the beaten egg whites into the yolk mixture with gentle movements from top to bottom to retain the air in the meringue. Add the walnuts and raisins, mixing gently.
