- 4 eggs
- 140 g flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon orange zest

- 200 g white chocolate
- 200 ml heavy cream

For the Caramel:
- 100 g sugar
- 40 g butter
- 75 ml liquid cream

For the Cream Cheese:
- 200 g cream cheese
- 50 g soft butter
- 100 g powdered sugar
- 1 packet vanilla sugar
- ½ teaspoon cinnamon

For the Chocolate Cream:
- 50 g dark chocolate
- 30 ml heavy cream
- 1 tablespoon butter

For Decoration:
- 150 ml heavy cream
- 2 packets vanilla sugar
- 150 g dark chocolate (cold, kept in the freezer for a few minutes)
- White and dark chocolate balls

Step by Step

Step 1: Preparing the Cake Base

1. Start by preheating the oven to 180°C (medium heat). Prepare a 20 cm diameter cake pan by lining it with parchment paper.
2. Break the chocolate into pieces and add it along with the butter into a saucepan. Place on low heat and stir constantly until the chocolate and butter melt and become a homogeneous mixture.
3. Add the sugar and mix well until fully incorporated and becomes a creamy paste.
4. Incorporate the eggs, one at a time, mixing well after each. It is important to be patient here, as each egg must perfectly integrate into the mixture.
5. In another bowl, mix the flour with cocoa, baking powder, and orange zest. Add this mixture to the wet composition and mix until everything is uniform.
6. Pour the mixture into the prepared pan and bake for about 40 minutes or until a toothpick inserted in the center comes out clean. After baking, remove the cake from the oven and let it cool on a rack.

Step 2: White Chocolate Ganache

1. In a saucepan, mix the broken white chocolate with the heavy cream. Place on low heat, stirring constantly until the chocolate completely melts.
2. Once homogenized, let the mixture cool slightly, then refrigerate for a few hours, preferably overnight, to harden.

Step 3: Preparing the Caramel

1. In a saucepan, add the sugar and let it caramelize on low heat, stirring gently. Once it turns golden, remove from heat.
2. Be careful! Add the liquid cream (make sure to keep away from the steam!). Put back on the heat and stir continuously until the mixture thickens. Add the butter and continue boiling until the caramel reaches the desired consistency. Let it cool.

Step 4: Cream Cheese

1. In a bowl, beat the cream cheese with the soft butter until fluffy.
2. Add the powdered sugar, vanilla sugar, and cinnamon, mixing until everything is well incorporated. Let the cream cool in the refrigerator.

Step 5: Chocolate Cream

1. Melt the dark chocolate together with the butter and heavy cream, stirring constantly until you obtain a homogeneous mixture. Let it cool.

Step 6: Assembling the Cake

1. Once the cake base has cooled completely, cut it into 3 equal parts.
2. Place the first layer on a platter. Pour half of the white chocolate cream, followed by the caramel, and cover with the other half of the white chocolate cream.
3. Add the second layer, half of the cream cheese, the dark chocolate cream, and the remaining cream cheese. Cover with the last layer.
4. Whip the heavy cream with the 2 packets of vanilla sugar until fluffy. If necessary, add a cream stabilizer.
5. Coat the cake with a thin layer of whipped cream and refrigerate until decorating is complete.

Step 7: Decorating the Cake

1. Grate the dark chocolate with a serrated knife and mix it with the chocolate balls.
2. Coat the cake with the grated chocolate and refrigerate again until serving.

Possible Variations

If you want to experiment, you can replace the milk chocolate with dark chocolate for a more intense flavor. Also, adding nuts or toasted hazelnuts between layers will provide a crunchy texture that perfectly complements the soft cream.
