To prepare a delicious chickpea fritter recipe, the first step is to ensure that the chickpeas are properly prepared. Soak the chickpeas in water with a teaspoon of baking soda for 14-16 hours. This process is essential, as the chickpeas need to soften well, considering that they will not be boiled later but will be used directly in the preparation of the fritters. After the soaking time is up, rinse the chickpeas under cold running water to remove the baking soda and impurities.

Once the chickpeas are clean, drain them well and transfer them to the food processor bowl. Add a medium onion chopped into cubes and a few cloves of garlic (about 3-4, depending on your preference). These ingredients will give a wonderful flavor to the fritters. Start the processor and blend everything at medium speed until the mixture becomes a smooth paste. It is important to stop the machine occasionally and scrape down the sides of the bowl so that the chickpeas and other ingredients are evenly ground.

After you have obtained a fine paste, add the remaining ingredients, such as freshly chopped parsley (about one bunch), salt, pepper, sweet or hot paprika, to taste, and possibly a pinch of cumin for extra flavor. Mix all the ingredients well with a spatula or by hand until they are well combined, and the mixture becomes slightly sticky.

Now it’s time to form the fritters. Take a tablespoon of the mixture and shape it into balls or discs, depending on your preference. The fritters can be fried in a pan with hot oil over medium heat until golden brown on all sides. Alternatively, for a healthier option, you can bake the fritters. Place them on a baking tray lined with parchment paper, lightly drizzle with oil, and bake at 200 degrees Celsius for about 25-30 minutes, turning them halfway through to brown evenly.

These chickpea fritters are perfectly delicious served warm, alongside a fresh salad or a yogurt garlic sauce. Enjoy your meal!
