Mushroom and Carrot Sauté

To start this delicious recipe, prepare the necessary ingredients: 50-60 ml of oil, one large onion, 250 g of fresh mushrooms, 2-3 carrots, salt, pepper, a few cloves of garlic, and a bunch of fresh parsley. Make sure you also have a portion of warm polenta to accompany this savory dish.

In a large pan, pour in the oil and heat it over medium heat. Add the finely chopped onion and let it sauté gently, stirring occasionally to avoid burning. After about 3-4 minutes, when the onion becomes translucent, add the halved mushrooms. They will release water as they cook, so there is no need to add water just yet.

Once the mushrooms have started to soften, add the sliced carrots. This is when the aroma begins to become enticing. Let the mixture simmer on low heat, covering the pan with a lid, to allow the ingredients to steam. It is important to stir occasionally to prevent sticking to the bottom of the pan.

After about 10-15 minutes, when the mushrooms and carrots have started to soften, check the consistency. If the carrots still seem too hard, gradually add water, being careful not to overdo it – half a glass is sufficient. Let the mixture continue to simmer so that the carrots cook evenly.

When the vegetables are almost cooked, add salt and pepper to taste, along with a few whole cloves of garlic, which will add extra flavor. Cover the pan again and let the dish simmer for a few more minutes to allow the flavors to meld well.

Once you have turned off the heat, sprinkle the finely chopped parsley on top, giving a fresh look and vibrant aroma to the dish. Gently stir to combine the ingredients and enjoy the finished dish.

Serve this delicious mixture alongside warm polenta, which will add a pleasant texture and a perfect contrast to the cooked vegetables. Enjoy your meal!
