Strawberry Cake
To prepare a delicious and slightly moist strawberry dessert, we start by carefully separating the yolks from the whites. This step is essential as it will allow us to achieve an airy and fluffy texture. In a medium-sized bowl, we add the yolks and mix them with sugar and vanilla sugar, using a whisk or a mixer on low speed. The mixture should become creamy and take on a light color. Then, we incorporate the oil, continuing to mix to obtain a homogeneous composition.
The next step is to sift the flour over the yolk mixture. This process not only helps us avoid lumps but also aerates the flour, making our batter lighter. We gently mix with a spatula or a wooden spoon, being careful not to lose volume.
Once the flour is incorporated, we gradually add the milk, continuously mixing until we obtain a medium-consistency batter that should not flow off the spoon but be fluid enough to spread easily in the pan. In another bowl, we beat the egg whites until stiff peaks form. This step is crucial as the beaten egg whites will add air and lightness to our dessert.
Carefully, we add the beaten egg whites to the batter mixture, using a spatula to incorporate them without losing volume. The movements should be gentle and circular, from top to bottom, to preserve the air in the egg whites.
We prepare a baking tray, lining it with parchment paper, which will help us easily remove the dessert after baking. We carefully pour the batter into the tray, ensuring it is evenly distributed. On top, we place the washed and halved or sliced strawberries, depending on preference. These will not only provide a delicious taste but also an attractive presentation.
With the oven preheated to 180 degrees Celsius, we place the tray inside and bake for about 45 minutes. It is important to check the baking with a toothpick; if it comes out clean when inserted in the middle of the dessert, it means it is ready. After baking, we let it cool slightly, then we can portion and enjoy this wonderful strawberry delicacy, perfect for any occasion.
