My Quince Jelly

Ingredients: quince peels and cores (with boxes and seeds) crest apples (or those with hard pulp) (with cores and seeds) sugar (the amount varies) lemon juice vanilla ground cloves - a pinch

To prepare a delicious apple jelly, start by gathering the necessary ingredients. Choose fresh, flavorful apples that will provide an intense taste to the jelly. Wash the apples thoroughly, including the skins and cores, then cut them into quarters. Use a large, deep pot to arrange them evenly. Add water to cover the apples by about 4 centimeters. Place the pot on the heat and let it boil. It is important to boil the apples until they become very soft, which will take about 30-45 minutes, depending on the type of apples used.

Once the apples have boiled, strain the mixture carefully. It is essential to let the liquid drain on its own, without pressing the fruit, to avoid losing the fine pulp that could make the jelly appear cloudy. After all the liquid has drained, measure it using a graduated container. For every liter of liquid obtained, add one kilogram of sugar. This ratio will ensure a perfect texture and taste.

Put the liquid back on to boil, starting with a high heat, so that it reaches boiling point quickly. Maintain high heat for the first 10-15 minutes, then reduce it to a lower flame, continuing to stir regularly. This will prevent the jelly from sticking to the bottom of the pot and ensure even boiling.

To check if the jelly is ready, take a teaspoon of the mixture and place it on a plate. Put the plate in the refrigerator for a few minutes, then check the consistency. If the jelly separates easily when pushed with the spoon and the halves do not come together, it is a sign that it is ready. At this point, you can add your favorite flavors: a splash of vanilla, a few cloves, and the freshly squeezed juice of a lemon. Mix well and let the jelly boil for another minute.

As soon as the jelly is ready, pour it hot into sterilized jars. Add a pinch of salicylate for preservation, then cap the jars. It is recommended to wrap them in blankets to allow for gradual cooling, which helps form a better seal. Once the jars have completely cooled, you can store them in the pantry on shelves, where they will be kept in ideal conditions. This apple jelly will not only bring a perfect taste to your table, but it will also be a wonderful gift for your loved ones!
