In a soup pot, heat the oil, then add the finely chopped onion. Sauté the onion over medium heat until it becomes translucent and releases its flavors. This step is essential to provide the soup with a rich flavor base. After the onion has softened, add the pumpkin cut into cubes. Mix well to combine the ingredients, then sprinkle a little salt to enhance the flavors.

Once the pumpkin has softened, add enough water to cover all the ingredients. Put the lid on the pot and let everything simmer on low heat until the pumpkin becomes very soft. If you desire a thicker soup, you can let it simmer a little longer. Use a spatula to stir occasionally, ensuring that the pumpkin partially mashes, releasing starch and giving the soup consistency.
