Coffee Semifreddo
To prepare a delicious and refreshing dessert, we will start by gathering the necessary ingredients and preparing our utensils. We need 4 egg yolks, 100 g of sugar, 2 tablespoons of strong coffee (preferably espresso), 200 ml of whipping cream, 200 g of biscuits (digestive type or any other preferred type), and 50 g of roasted nuts, which will add a crunchy texture and a pleasant taste.
In a medium bowl, using a mixer, we will mix the egg yolks with the sugar. It is essential to mix well until the mixture becomes creamy and a bright yellow. This will be our cream base. Then, we add the two tablespoons of coffee, mixing again with the mixer until the coffee is fully integrated into our egg yolk cream. The aroma of the coffee will turn this dessert into a true delight.
In another bowl, we will whip the cream with the mixer until it becomes firm but not overly stiff, so it does not turn into butter. It is important to ensure that the cream is well whipped, but we keep the air in it to achieve a light texture. Once the cream is ready, we carefully fold it into the coffee cream using a spatula and mixing from top to bottom, so we do not lose the air in the cream. This step is crucial to obtain a fluffy and airy cream.
The next step is to prepare the loaf pan. We will place a plastic wrap inside the pan, ensuring it exceeds the edges of the pan, so we can cover the dessert later. We start by crushing the biscuits, so we get small pieces, but not too fine. We pour the first layer of biscuits into the pan, making sure to cover the bottom well. Then, we add a generous layer of coffee cream, followed by a handful of roasted nuts to add a crunchy contrast.
We repeat the process, adding another layer of coffee cream and a second layer of biscuits, thus creating a beautiful and delicious structure. Once we are done, we cover the dessert with plastic wrap and place it in the freezer, letting it cool and set overnight.
The next day, we take the dessert out of the freezer and let it thaw a little before cutting it into thicker slices. We decorate each slice according to preferences, adding coffee beans, meringues, or whipped cream. Thus, we have created a refined dessert with a rich coffee flavor and varied textures, perfect for impressing guests or simply indulging ourselves. Enjoy your meal!
