Ravase Pie
To prepare a delicious cheese and raisin pie, we start by ensuring we have all the necessary ingredients at hand and that we are ready to enjoy the cooking process. First, we take a round baking dish with a diameter of 23 cm and a depth of 6 cm and line it with baking paper to prevent the dough from sticking during baking and to facilitate the later removal of the pie.
In a bowl, we grate the cheese, preferably well-drained cottage cheese, and mix it with the grated zest of lemon and orange. The added fresh flavors will provide a pleasant taste and a delightful aroma to our pie. In another bowl, we combine granulated sugar with vanilla sugar to create a sweet base that will perfectly complement the cheese. Then, in a third bowl, we place the raisins, which we clean, wash, and dry to remove excess water, ensuring they are ready to absorb the flavors from the filling.
In a fourth bowl, we crack the eggs and beat them together with sweet milk, obtaining a homogeneous mixture that will help bind the ingredients. Preparing the dough sheet is the next step. In a bowl, we sift the flour and add oil, the egg, and baking powder mixed with vinegar, stirring well. Then, we start adding a tablespoon of warm water at a time, mixing well until we obtain a dough suitable for kneading. It is important not to add too much flour to avoid weighing down the final texture of the pie.
We divide the dough into four equal parts, and from each quarter, we roll out a thin sheet. It is recommended to use as little flour as possible to prevent the dough from sticking to the work surface. We place the first sheet in the dish, and on top of it, we spread 1/3 of the cheese mixture, then add 1-2 handfuls of sugar and 1/3 of the raisins. Using a spoon, we pour the egg mixture, making sure to cover the cheese evenly.
We repeat this process with the other sheets, ensuring that each layer is well distributed. Finally, we brush the last sheet with the egg mixture and sprinkle a little granulated sugar on top to achieve a golden and crispy crust during baking. We place the dish in the preheated oven and bake on low heat for about 60 minutes, until the pie takes on a beautiful color and feels firm to the touch. Then, we let the pie cool slightly before serving it, enjoying each slice with pleasure.
Ingredients: Dough: 500 g flour, 1/2 cup oil, 1 teaspoon baking powder, 1 tablespoon vinegar, 1 egg, a few tablespoons of warm water. Filling: 500 g cheese (telemea + sweet curd + not too spicy burduf cheese), lemon and orange zest, 500 g granulated sugar, 2-3 packets of vanilla sugar, 150 g raisins, 9 eggs, 2 cups full-fat milk.
