Preparation time: 20 minutes
Baking time: 40 minutes
Total time: 1 hour and 10 minutes
Number of servings: 10

Ingredients:

*For the sponge:*

- 150 g butter (important to be at room temperature)
- 125 g sugar
- Zest of one orange (preferably organic for a more intense flavor)
- 3 eggs
- 200 g flour
- A handful of raisins (suggestion: use golden raisins for a color contrast)
- 1 heaping teaspoon baking powder
- 1 tablespoon instant coffee (you can adjust the amount according to your preference)
- 1 teaspoon ground cinnamon

*For the cream:*

- 125 g butter (also at room temperature)
- 150 g sugar
- 50 ml whiskey (choose a quality whiskey)
- A handful of raisins (soaked in whiskey)
- 2 tablespoons cocoa powder (dark for an intense taste)
- A bar of dark chocolate (about 100 g)
- 1 tablespoon instant coffee
- 2 teaspoons flour

*For the syrup:*

- Whiskey and strong coffee (to intensify the flavors)

*For decoration:*

- Whipped cream (freshly whipped for an elegant look)

Instructions:

1. Preparing the sponge: In a large bowl, cream the butter with the sugar until it becomes a creamy and homogeneous mixture. Add the orange zest and continue mixing. Incorporate the eggs one at a time, mixing well after each.

2. Dry ingredients: In another bowl, combine the flour, baking powder, cinnamon, and instant coffee. Sifting the flour is essential to avoid lumps.

3. Combining ingredients: Fold the dry ingredient mixture into the butter mixture, alternating with half of the whiskey-soaked raisins. Use a spatula to gently mix, being careful not to lose the air in the mixture.

4. Baking: Preheat the oven to 180°C. Grease a cake pan with oil and pour in the mixture. Bake for about 40 minutes or until a toothpick inserted in the center comes out clean. Let the sponge cool in the pan for one hour.

5. Preparing the cream: In a saucepan, combine the butter, sugar, cocoa, flour, and whiskey. Cook over low heat, stirring continuously, until the cream begins to thicken. Remove from heat and add the instant coffee and broken pieces of chocolate. Mix well until smooth. Allow the cream to cool, then add the remaining raisins.

6. Assembling the cake: Once the sponge has cooled, remove it from the pan and cut it into three equal parts. Prepare a syrup from whiskey and strong coffee and drizzle each layer with this mixture. Fill each layer with cream, including on top.

7. Decoration: Decorate the cake with whipped cream, using a piping bag for an elegant look. You can also add some raisins or grated chocolate as decoration.

Serving suggestions: Serve the Irish Coffee Cake alongside a cup of fresh coffee or a glass of whiskey to enhance the flavors. This dessert is ideal for enjoying at a gathering with friends or at a festive meal.

Possible variations: You can experiment with different types of sugar (for example, brown sugar for a caramelized taste) or add nuts for a crunchy texture. Additionally, replacing the whiskey with a rum variant can offer an exotic touch.

This Irish Coffee Cake is a splendid combination of flavors and textures, perfect for adding a touch of elegance to any occasion. Enjoy every slice!
