- 150 g sugar
- 100 ml oil
- 3 egg yolks
- 250 ml lukewarm milk
- Rum and vanilla essence (to taste)

For the cheese filling:
- 250 g cottage cheese
- 2 eggs
- 100 g sugar
- 2 tablespoons sour cream
- 2 packets vanilla sugar
- Rum essence (to taste)

For decoration:
- 1 dark chocolate (melted)

Step by step – Making Cheese Pastry

1. Preparing the starter

The first step to obtaining a delicious pastry is preparing the starter. In a small bowl, add a tablespoon of flour and soak it with a little hot milk. Mix well and let it cool slightly. Then, add the fresh yeast, which has been softened in another bowl with a little cold milk, and a teaspoon of sugar. Cover the bowl with a towel and let it sit in a warm place for about 15 minutes, during which the yeast will start to activate.

2. Preparing the dough

In a large bowl or the bread machine, rub the egg yolks with the remaining sugar and a teaspoon of salt. Add the lukewarm milk and mix well. Add the flour, the prepared starter, and part of the oil. During kneading, gradually add the rest of the oil. Knead the dough for about 10 minutes until it becomes elastic and homogeneous.

3. Shaping the dough

Divide the dough into two equal parts. Roll one part out on the bottom of a baking tray lined with parchment paper, and braid the other part into three strands to form a cord. If you can’t make a long braid, don’t worry! You can create two shorter braids and place them in a ring shape around the dough in the tray. Let them rise in a warm place for about 20 minutes.

4. Preparing the cheese filling

Meanwhile, you can prepare the cheese filling. In a food processor, combine the cottage cheese, eggs, sugar, sour cream, vanilla sugar, and rum essence. Blend until you obtain a smooth and fragrant cream. This mixture will add a delicious and rich note to your pastry.

5. Assembling the pastry

After the dough has risen, pour the cheese filling into the center of the dough in the tray. Brush the edge with a beaten egg to give it a golden and shiny color during baking.

6. Baking

Preheat the oven to 180°C (or 160°C if using a convection oven). Bake the pastry for 30-40 minutes or until it is nicely browned on top. The aroma that will spread in the kitchen will make you eagerly await to enjoy it.

7. Decorating

After you take the pastry out of the oven, let it cool slightly. Then, pour the melted chocolate on top, which will add a decadent touch and make the dessert even more appealing.

Practical tips

- Flour: Choose a good quality flour with a medium protein content to achieve a fluffy dough.
- Yeast: Make sure the yeast is fresh. If you want to use dry yeast, use about 8 g.
- Cheese: You can use cottage cheese or ricotta, depending on your preferences. You can also add raisins or pieces of candied fruit to the filling for extra flavor.
- Decoration: Instead of chocolate, you can use sugar glaze or fresh fruits to decorate the pastry.

Nutritional benefits

This pastry is not only delicious but also nutritious, thanks to the healthy ingredients. Cottage cheese is a good source of protein and calcium, while the eggs add essential vitamins. The oil, although high in calories, provides healthy fats that help absorb fat-soluble vitamins.

Frequently asked questions

- Can I use whole wheat flour? Yes, but the dough will be denser. We recommend mixing whole wheat flour with white flour for a better texture.
- How can I store the pastry? Keep the pastry in an airtight container at room temperature for 2-3 days. You can freeze it for longer storage.
- What drinks pair well with the pastry? The pastry pairs perfectly with a sweet wine or a flavored tea. You can also try a cappuccino or a latte for a special breakfast.

Variations and serving suggestions

Cheese pastry can be adapted according to your preferences. You can experiment with different flavors, such as lemon or orange zest, or add herbs for a distinct taste. Serve the pastry warm or cold, alongside a fruit sauce or vanilla ice cream for a complete dessert.

End your Easter celebration with this traditional pastry that will not only delight your taste buds but also remind you of the beautiful moments spent with family. Enjoy every bite and share it with your loved ones!
