To prepare a delicious caltaboși recipe, we will start by ensuring we have all the necessary ingredients at hand. The first step is to wash the rice well and boil it in a pot with water and salt. It is important to let the rice boil until it becomes slightly soft, but not fully cooked, in order to preserve its texture. After boiling, we will drain the rice and rinse it under cold water to stop the cooking process and remove excess starch.

In the meantime, we will take care of the main ingredients: pork tongue, head, liver, and heart. These are placed in a large pot with water, to which we add salt and a few peppercorns for flavor. We boil all these ingredients until they become tender, and the meat easily separates from the bone. After boiling, we remove them from the water and let them cool slightly. Then, we clean the tongue from the skin, remove the large veins and cartilage from the liver, and then cut all the ingredients into small pieces.

To obtain a uniform composition, we pass everything through a meat grinder, using a sieve with holes of the right size to achieve a pleasant texture. In a large bowl, we mix this minced meat with the boiled rice. Here we will need to add salt, pepper, thyme, and allspice, being careful not to overdo it with the thyme, as an excess of it can alter the taste of the dish, giving it an unpleasant flavor.

After obtaining the homogeneous mixture, we prepare to fill the casings. The filling should be left a bit softer, so we make sure not to pack it too tightly. We twist the casing every 20 centimeters and tie the end with string to ensure that the filling will not come out during boiling. It is essential to make a few perforations with a needle so that the caltaboși do not swell and burst.

After finishing filling the casings, we place them in a pot with salted water that has been brought to a boil. We let the caltaboși simmer on low heat for 2-3 minutes, until the water starts to boil again. After this time, we carefully remove them and let them drain.

Caltaboși can be fried in a little oil until golden and crispy, but they can also be baked in the oven, giving them a different texture. They are served warm, alongside pickles, but they are just as good when cold. This traditional dish can add flavor to your meal and is perfect for special occasions. Enjoy your meal!
