To create a delicious seafood soup, the first step is to ensure that the seafood is completely thawed. This can include shrimp, squid, clams, or other seafood delicacies, depending on preferences. Once the seafood is prepared, we will sauté it in a large pan with a little olive oil. At this point, we add finely chopped onion, salt, pepper, crushed garlic, thyme, and basil. This combination will give an irresistible aroma and enhance the flavors of our dish.

After the onion becomes translucent and starts to caramelize, it's time to deglaze everything with a dry white wine, which will add a note of acidity and help highlight the flavor of the seafood. We let it simmer for a few minutes, allowing the alcohol from the wine to evaporate and the flavors to combine harmoniously.

In parallel, we prepare the fish broth. In a large pot, we add water and put in the turbot, which is a fish with white and tender flesh, to create a rich broth base. We season with salt and pepper, then add some vegetables for a more complex taste: sliced carrots, finely chopped celery, lemon slices, lemongrass, and a few slices of fresh ginger. These ingredients will add extra flavor and aroma to the soup. We let it simmer on low heat for about 30 minutes, then strain the broth to obtain a clear and fragrant liquid.

After the broth is strained, we add it over the sautéed onion and celery mixture, together with the tomato sauce. The latter will give a vibrant color and a sweet-sour taste. We mix the ingredients well and let them simmer together for a few minutes, so the flavors meld.

Now it's time to add the sautéed seafood and fresh clams to the soup. They will cook quickly, and their aroma will infuse the soup, transforming it into a delicacy. We let everything simmer on low heat for another 5-7 minutes until the clams open and the seafood becomes opaque.

For serving, we choose a clay pot, which will retain the heat of the soup and add a rustic charm to the dish. We pour the hot soup into the prepared bowls and can garnish with a few fresh basil or parsley leaves. This savory dish will prove to be perfect for a special dinner, bringing authentic Mediterranean flavors to your table.
