Ingredients:
- 1 kg of flour
- 3 eggs
- 2 packets of dry yeast
- 1-2 tablespoons of salt
- 300 ml of milk
- 2 tablespoons of oil
Step-by-step instructions:
1. Preparing the flour paste: In a metal cup, pour 100 ml of the measured milk. Place over low heat and wait for it to start boiling. Once the milk boils, add 2 tablespoons of flour and mix vigorously with a wooden spatula to avoid lumps. Let the mixture cool.
2. Activating the yeast: In a metal bowl, add the remaining flour, sprinkle 1-2 tablespoons of salt, and add the two packets of yeast. Mix the dry ingredients well. It is important for the yeast to be activated correctly so that the dough rises beautifully.
3. Forming the dough: After the milk paste has cooled, add it to the bowl with flour. Crack the 3 eggs into the bowl and start kneading. Gradually add the remaining warm milk (about 200 ml), mixing continuously. Finally, add the 2 tablespoons of oil, which will give the dough extra smoothness. Continue kneading the dough for 15-20 minutes until it becomes elastic and smooth.
4. Rising the dough: Dust the dough with a little flour and cover it with a clean towel. Place it in a warm spot, away from drafts, for about 1 hour and 30 minutes. The dough should double in volume.
5. Forming the pasca: After the dough has risen, turn it out onto a floured wooden board. Break off a handful of dough and form a braid to place on top of the pasca. Shaping the braid can be a creative activity, so feel free to experiment with different shapes.
6. Preparing for baking: Grease a round baking pan with oil and transfer the dough into it. Place the braid in a cross shape on top. Beat an egg yolk and brush the pasca to give it a golden color when baked.
7. Baking the pasca: Preheat the oven to 180°C. Place the pasca in the preheated oven and bake for 40 minutes or until it turns golden brown and nicely browned. It is good to check the pasca from time to time to ensure it does not burn.
8. Cooling and serving: Once the pasca is baked, remove it from the oven and brush it with a little cold water, then cover it with kitchen towels to retain moisture. Let it cool completely at room temperature, then carefully remove it from the pan and cut into slices.
Serving suggestions: Pasca can be enjoyed plain or alongside a fruit sauce, such as raspberry or strawberry sauce, for a delicious contrast. You can also add sweet cheese, raisins, or orange peel to the filling for a richer version.
