Octopus in wine

 Ingredients: - 1, 1/2 octopus - about 20 small whole onions - 50ml olive oil - 300ml white or red wine - 2 bay leaves - a stick of cinnamon - 2-3 cloves - a little salt - tomato juice

Octopus is a versatile and flavorful ingredient that can transform any meal into an unforgettable culinary experience. We start by preparing the octopus. We wash it carefully under a stream of cold water, ensuring that all impurities are removed. After cleaning the octopus, we cut it into suitable pieces so that it cooks evenly. Then, we take a pressure cooker and fill it with enough water to completely cover the octopus. We place it on the heat, and from the moment the lid closes and the red button rises, we let the octopus boil for 10 minutes. This method will help tenderize the meat, making it more delicate and flavorful.

Once the time has passed, we carefully remove the octopus from the pot and rinse it under cold water, discarding the water it boiled in to remove any trace of impurities. Now, we turn our attention to the small onions. We patiently peel them, being careful not to damage them. To prevent them from falling apart during cooking, we prick them with a skewer, allowing their flavor to gradually release into the sauce.

In the same pot, we add the octopus, the prepared onions, a splash of olive oil for extra flavor, white wine for a refined taste, and bay leaves, which will add an aromatic note. We season with cinnamon, cloves, and salt, and to add a touch of freshness, we also add tomato juice. We mix everything well, ensuring that the ingredients are evenly distributed.

We close the pot again and let it boil for 15 minutes from the moment the red button rises. The aroma will fill the kitchen, and the octopus will absorb all the spices, becoming a delight. After we open the pot, we can check the consistency of the sauce. If we want a thicker sauce, we mix 1-2 teaspoons of cornmeal (or wheat) with a little water, forming a smooth paste, which we add to the sauce. We continue to cook without the lid, so the sauce thickens and the flavors concentrate.

In the end, we serve the octopus with the rich and aromatic sauce, alongside sides like rice or mashed potatoes, to complete this special dish. It will not only impress your loved ones but will turn any meal into a celebration of flavors!
